Tomato Artichoke Pasta

Ingredients

The sauce

  • 1-2 tbsp extra virgin olive oil
  • 5-6 cloves garlic, pressed
  • 1 can diced tomatoes
  • 3 oz tomato paste
  • 3 oz white cooking wine or chicken broth
  • ½ tsp Kosher salt
  • ¼ tsp black pepper
  • ½ cup chopped green onions
  • 6-7 oz marinated artichoke hearts, chopped

The pasta

  • 1 package fresh pasta or 1 lb. dried pasta

Instructions

  1. Heat 1-2 tablespoons of olive oil in a large saucepan over medium heat.
  2. Bring a pot of salted water to a boil.
  3. When the oil is hot, add garlic, green onions, and artichoke hearts, and sauté until fragrant.
  4. Add diced tomatoes, tomato paste, white cooking wine or chicken broth, salt, and pepper to the saucepan.
  5. Heat the sauce through and toss it with the cooked pasta.
