Ingredients

The sauce

  • 1 tbs olive oil
  • 1 lb mild Italian sausage
  • 1 clove garlic
  • 1 medium yellow pepper
  • 14 oz artichoke hearts
  • 28 oz San Marzano tomatoes
  • 15 oz plain tomato sauce
  • 1 tsp maple syrup
  • to taste salt
  • to taste pepper

The pasta

  • 2 lbs whole grain pasta

Garnishes

  • to taste fresh basil
  • to taste fresh Parmesan cheese

Instructions

  1. Boil a large pot of water.
  2. Heat olive oil in a skillet and cook the sausage until browned, then set aside.
  3. In the same skillet, sauté garlic, yellow pepper, and artichoke hearts until softened.
  4. Add the sausage back to the skillet with tomatoes, tomato sauce, and maple syrup, then season with salt and pepper.
  5. Simmer the sauce for about 10 minutes until thickened.
  6. Cook the pasta according to package directions.
  7. Taste the sauce and adjust seasoning if necessary.
  8. Drain the pasta and serve topped with sauce, Parmesan, and basil.
