Baked Italian Stuffed Artichokes

Ingredients

The artichokes

  • 4 large Ocean Mist Farms Artichokes
  • 2 tbsp Lemon juice
  • 2 tbsp Olive oil
  • 2 tbsp Grated Parmesan cheese

The filling

  • 1 lb Ground Italian Sausage
  • 4 cloves Garlic (minced)
  • 2 tsp Italian seasoning
  • ½ cup Grated Parmesan cheese

Instructions

  1. Trim the tops and stems of the artichokes.
  2. Boil the artichokes for 15 minutes and let them cool upside down.
  3. Preheat the oven to 375°F (190°C).
  4. Mix the sausage, garlic, Italian seasoning, and half a cup of Parmesan cheese in a bowl.
  5. Scoop out the fuzzy choke from the cooled artichokes.
  6. Drizzle lemon juice and olive oil over the artichokes.
  7. Stuff the artichokes with the sausage mixture and sprinkle with remaining Parmesan.
  8. Cover with foil and bake for 40-50 minutes until the sausage is cooked.
  9. Broil for a few minutes to brown the cheese.
