Instructions
- Heat oil in a skillet and cook ground turkey with spices until browned.
- Transfer meat to a bowl and sauté bell peppers and onion in the same skillet.
- Combine cooked vegetables with the meat and add cheeses.
- Prepare artichokes by trimming the stems and cutting off the tops.
- Remove inner leaves and fuzzy choke from artichokes, rubbing with lemon to prevent browning.
- Stuff the artichokes with the meat-vegetable filling.
- Add crushed tomatoes and seasonings to the slow cooker, then place stuffed artichokes inside.
- Top with remaining Parmesan cheese and cook on low for 6-8 hours.
- Serve with marinara sauce and optional pasta and toppings.
