Ingredients

The Filling

  • 2 teaspoons olive oil or avocado oil
  • 1 pound ground turkey or chicken
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon dried fennel seeds
  • ¾ teaspoon fine salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes
  • 1 medium red bell pepper
  • 1 small yellow onion
  • 4 cloves garlic
  • ½ cup shredded part-skim mozzarella cheese
  • ½ cup shredded Parmesan cheese

The Artichokes and Marinara

  • 4 pieces artichokes
  • 1 piece lemon
  • 1 15-ounce can no-salt-added crushed tomatoes
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 1 serving cooked pasta (optional)
  • 1 serving fresh chopped basil (optional)
  • 1 serving more parmesan cheese (optional)

Instructions

  1. Heat oil in a skillet and cook ground turkey with spices until browned.
  2. Transfer meat to a bowl and sauté bell peppers and onion in the same skillet.
  3. Combine cooked vegetables with the meat and add cheeses.
  4. Prepare artichokes by trimming the stems and cutting off the tops.
  5. Remove inner leaves and fuzzy choke from artichokes, rubbing with lemon to prevent browning.
  6. Stuff the artichokes with the meat-vegetable filling.
  7. Add crushed tomatoes and seasonings to the slow cooker, then place stuffed artichokes inside.
  8. Top with remaining Parmesan cheese and cook on low for 6-8 hours.
  9. Serve with marinara sauce and optional pasta and toppings.
