Unsalted butter (softened)
Instructions
- Preheat the oven to 450°F (232°C).
- Trim the top of the artichokes and the bottom of the stem, removing tough outer leaves.
- Cut the artichokes in half lengthwise and rub them with a lemon slice to prevent browning.
- Scoop out the fuzzy choke from the inside of the artichokes.
- Place the artichokes cut side up in a baking dish, brush with olive oil, and season with salt and pepper.
- Insert a clove of garlic into each artichoke half and top with a lemon slice.
- Flip the artichokes cut side down and brush the outer sides with olive oil, seasoning again.
- Cover the dish with foil and bake for 30 to 35 minutes until tender.
- Remove the foil, flip the artichokes, and mash the roasted garlic with butter.
- Spread the garlic butter over the artichokes and return to the oven for an additional 1-3 minutes.
