Roasted Artichokes

Ingredients

The artichokes

  • 3 large Artichokes

The seasoning

  • 2 tbsp Olive oil
  • ½ tsp Sea salt
  • ¼ tsp Black pepper
  • 6 cloves Garlic (peeled)
  • 1 medium Lemon (sliced into half moons)
  • 1 tbsp Unsalted butter (softened)

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. Trim the top of the artichokes and the bottom of the stem, removing tough outer leaves.
  3. Cut the artichokes in half lengthwise and rub them with a lemon slice to prevent browning.
  4. Scoop out the fuzzy choke from the inside of the artichokes.
  5. Place the artichokes cut side up in a baking dish, brush with olive oil, and season with salt and pepper.
  6. Insert a clove of garlic into each artichoke half and top with a lemon slice.
  7. Flip the artichokes cut side down and brush the outer sides with olive oil, seasoning again.
  8. Cover the dish with foil and bake for 30 to 35 minutes until tender.
  9. Remove the foil, flip the artichokes, and mash the roasted garlic with butter.
  10. Spread the garlic butter over the artichokes and return to the oven for an additional 1-3 minutes.
