Ingredients

The artichokes

  • 1 large artichoke

The seasoning

  • 2 tablespoons olive oil
  • to taste kosher salt
  • to taste black pepper

Instructions

  1. Remove the stem of the artichoke, leaving about an inch.
  2. Trim the sharp tips of the bracts using kitchen shears.
  3. Steam the artichoke for 20 minutes in boiling water.
  4. Let the artichoke cool, then slice it in half.
  5. Scoop out the choke and purple flesh using a spoon.
  6. Brush both sides of the artichoke with olive oil and season with salt and pepper.
  7. Grill the artichoke halves on medium heat for about 10 minutes, then flip and grill for an additional 5-10 minutes until tender.
  8. Serve with desired dipping sauces.
