Grilled Artichokes

Ingredients

The artichokes

  • 2 whole fresh artichokes

The marinade

  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1 tablespoon herbs (e.g., parsley, thyme)

Instructions

  1. Wash artichokes and trim the tops and stem, then split in half.
  2. Scoop out the flower portion in the center using a metal spoon.
  3. Boil the artichokes for 10 minutes in hot water until almost tender.
  4. Place artichokes cut side up in a dish.
  5. Make a marinade or vinaigrette and drizzle it over the artichokes.
  6. Marinate for at least 30 minutes.
  7. Grill the artichokes on a hot grill, starting with the outside facing the heat for a few minutes, then turn them over and grill for an additional 5 minutes until golden brown.
