Lemon Herb Grilled Artichokes

Ingredients

The artichokes

  • 2 pieces fresh artichokes
  • Water

The vinaigrette

  • 1 piece lemon (juice and zest)
  • 1 ½ tablespoons extra virgin olive oil
  • 2 cloves garlic (minced)
  • 1 ½ teaspoons Herbes de Provence
  • Pinch black pepper
  • Pinch salt (optional)

Instructions

  1. Trim the tops and stems of the artichokes and slice them in half vertically, scooping out the center.
  2. Cook the trimmed artichokes in a pot of water over medium heat for 10 minutes until almost tender.
  3. Place the precooked artichokes in a baking dish.
  4. Whisk together lemon juice and zest, olive oil, garlic, Herbes de Provence, black pepper, and salt to make the vinaigrette.
  5. Drizzle the vinaigrette over the artichokes and marinate for 30 minutes.
  6. Grill the artichokes, first with the outside facing the heat for a few minutes, then turn and grill the inside for an additional 5 minutes until golden brown.
  7. Serve immediately.
