Lemon Herb Grilled Artichokes

Instructions
- Trim the tops and stems of the artichokes and slice them in half vertically, scooping out the center.
- Cook the trimmed artichokes in a pot of water over medium heat for 10 minutes until almost tender.
- Place the precooked artichokes in a baking dish.
- Whisk together lemon juice and zest, olive oil, garlic, Herbes de Provence, black pepper, and salt to make the vinaigrette.
- Drizzle the vinaigrette over the artichokes and marinate for 30 minutes.
- Grill the artichokes, first with the outside facing the heat for a few minutes, then turn and grill the inside for an additional 5 minutes until golden brown.
- Serve immediately.
