Ingredients

The puree

  • 1 head garlic
  • 2 teaspoons extra-virgin olive oil
  • ½ teaspoon Dijon mustard
  • 2 teaspoons water
  • to taste salt

The artichokes

  • ½ lemon
  • cup water
  • 2 medium artichokes
  • to taste salt
  • to taste freshly ground black pepper
  • 1 tablespoon extra-virgin olive oil
  • to taste fresh chopped herbs or shredded Parmesan cheese

Instructions

  1. Preheat the grill to medium heat (about 350-375°F).
  2. Wrap garlic cloves in foil with 1 teaspoon of olive oil and grill for about 15 minutes until soft.
  3. Cool the garlic, then squeeze the paste into a bowl and mash with a fork.
  4. Stir in Dijon mustard, 1 teaspoon of olive oil, water, and a pinch of salt.
  5. In a microwave-safe dish, combine the juice of the lemon with water.
  6. Trim the artichokes, dip cut edges in lemon water to prevent browning, and scoop out the fuzzy centers.
  7. Microwave the artichokes for 6-8 minutes until fork tender.
  8. Remove excess liquid, drizzle with 1 tablespoon of olive oil, and coat evenly.
  9. Place artichokes on the grill cut side down for about 3 minutes until grill marks appear.
  10. Serve artichokes with garlic-Dijon puree and garnish with herbs or Parmesan cheese.
