Ingredients

The artichokes

  • 5 pieces baby artichokes

The seasoning

  • 1 piece lemon, halved
  • 1 tablespoon avocado oil
  • to taste none Kosher salt
  • to taste none freshly ground pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Fill a large bowl with cold water, squeeze in the lemon juice, and add the lemon halves.
  3. Chop the artichokes about ¼ of the way from the top and remove all tough outer leaves.
  4. Trim the stem and base of the artichokes with a sharp knife.
  5. Cut the trimmed artichokes in half and place them in the lemon water.
  6. Drain the artichokes and toss them with avocado oil, salt, and pepper.
  7. Place the artichokes on a foil-lined baking sheet and roast for 20-25 minutes, flipping halfway through.
  8. Remove from the oven and squeeze fresh lemon juice on top before serving.
