Simply Sauteed Baby Artichokes With Lemon & Garlic

Instructions
- Combine olive oil, lemon juice, garlic, salt, and pepper in a bowl.
- Prepare the artichokes by trimming them and removing tough outer leaves until tender inner leaves are visible.
- Slice the artichokes in half and toss them in the olive oil mixture to coat.
- Heat a non-stick pan over medium-high heat and add the artichokes along with the olive oil mixture.
- Cook for about 3 minutes until lightly browned, then add a splash of water and cook for another 2 minutes.
- Flip the artichokes, add another splash of water, cover, and cook for 2-3 more minutes.
- Remove the lid and let any remaining water evaporate while browning the other side.
- Check if the artichokes are done by piercing them with a fork or knife.
