Ingredients

The artichokes

  • 1 lb baby artichokes

The seasoning

  • 2 tbsp extra virgin olive oil
  • Juice from one large lemon lemon juice
  • 2 cloves crushed garlic
  • to taste salt
  • to taste pepper

Instructions

  1. Combine olive oil, lemon juice, garlic, salt, and pepper in a bowl.
  2. Prepare the artichokes by trimming them and removing tough outer leaves until tender inner leaves are visible.
  3. Slice the artichokes in half and toss them in the olive oil mixture to coat.
  4. Heat a non-stick pan over medium-high heat and add the artichokes along with the olive oil mixture.
  5. Cook for about 3 minutes until lightly browned, then add a splash of water and cook for another 2 minutes.
  6. Flip the artichokes, add another splash of water, cover, and cook for 2-3 more minutes.
  7. Remove the lid and let any remaining water evaporate while browning the other side.
  8. Check if the artichokes are done by piercing them with a fork or knife.
