Brie Stuffed Artichokes

The sourdough bread crumbs

thick cut sourdough bread, torn into pieces

roasted pistachios, finely chopped

Instructions
- 1. Boil salted water and prepare the artichokes by cutting the stems and the top third off.
- 2. Boil the artichokes for 15-20 minutes, then drain upside down.
- 3. In a saucepan, heat cream and brie until smooth, then stir in egg yolk and parmesan cheese, seasoning with pepper.
- 4. Preheat the oven to 400°F.
- 5. Prepare the artichokes by opening them up and removing the choke.
- 6. Fill the artichokes with the cheese sauce.
- 7. Combine bread crumbs, pistachios, butter, oregano, and salt in a bowl, then sprinkle over the artichokes.
- 8. Bake for 10-15 minutes until cheese is bubbling and breadcrumbs are golden.
- 9. Serve warm with honey drizzled on top.
