Brie Stuffed Artichokes

Ingredients

The artichokes

  • 3-4 medium artichokes
  • cup heavy cream
  • 8 ounces brie, diced
  • ½ cup grated parmesan cheese
  • 1 each egg yolk
  • to taste pepper
  • honey for serving

The sourdough bread crumbs

  • 2 slices thick cut sourdough bread, torn into pieces
  • ½ cup roasted pistachios, finely chopped
  • 2 tablespoons butter, softened
  • 1 teaspoon dried oregano
  • to taste salt + pepper

Instructions

  1. 1. Boil salted water and prepare the artichokes by cutting the stems and the top third off.
  2. 2. Boil the artichokes for 15-20 minutes, then drain upside down.
  3. 3. In a saucepan, heat cream and brie until smooth, then stir in egg yolk and parmesan cheese, seasoning with pepper.
  4. 4. Preheat the oven to 400°F.
  5. 5. Prepare the artichokes by opening them up and removing the choke.
  6. 6. Fill the artichokes with the cheese sauce.
  7. 7. Combine bread crumbs, pistachios, butter, oregano, and salt in a bowl, then sprinkle over the artichokes.
  8. 8. Bake for 10-15 minutes until cheese is bubbling and breadcrumbs are golden.
  9. 9. Serve warm with honey drizzled on top.
