Chipotle Black Beans

Ingredients

The beans

  • 1 pound dried black beans
  • 6 cloves garlic
  • 2 medium yellow onions
  • 2 bay leaves bay leaves
  • 2 teaspoons adobo sauce
  • 2 chipotle chilies chipotle chilies

The spices and seasoning

  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 6 cups water
  • to taste fresh lemon juice
  • to taste fresh lime juice
  • to taste salt
  • to taste black pepper

The oil

  • 2 tablespoons olive oil

Instructions

  1. Heat oil in a Dutch oven or large pot over medium-high heat until shimmering.
  2. Add chopped onions and cook until softened, about 5 minutes.
  3. Stir in minced garlic and cook until fragrant, about 30 seconds.
  4. Add the soaked black beans, chipotle peppers, adobo sauce, cumin, oregano, and bay leaves.
  5. Pour in enough water to cover the beans and stir to combine.
  6. Bring the mixture to a boil over medium-high heat.
  7. Reduce the heat and simmer until the beans are tender, about 1½ to 2 hours.
  8. Remove from heat and discard the chipotle chilies and bay leaves if desired.
  9. Stir in lemon and lime juices, and season with salt and pepper to taste.
