Instructions
- Heat oil in a Dutch oven or large pot over medium-high heat until shimmering.
- Add chopped onions and cook until softened, about 5 minutes.
- Stir in minced garlic and cook until fragrant, about 30 seconds.
- Add the soaked black beans, chipotle peppers, adobo sauce, cumin, oregano, and bay leaves.
- Pour in enough water to cover the beans and stir to combine.
- Bring the mixture to a boil over medium-high heat.
- Reduce the heat and simmer until the beans are tender, about 1½ to 2 hours.
- Remove from heat and discard the chipotle chilies and bay leaves if desired.
- Stir in lemon and lime juices, and season with salt and pepper to taste.
