Ingredients

The soup base

  • 1 cup chopped sweet or yellow onion
  • ½ cup chopped carrots
  • ½ cup chopped celery
  • 3 cloves garlic, minced
  • 1 tablespoon fresh chopped rosemary leaves
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 2 links vegan/veggie sausage (optional)
  • 1 can great northern beans, with liquid (15 ounce can)
  • 1 can diced/crushed tomatoes, with liquid (14.5 ounces)
  • 4 cups veggie broth, low sodium if needed

The pasta

  • 8 ounces pasta (gluten-free if needed)

Optional toppings

  • to taste Grateable Vegan Parmesan
  • to taste Parsley

Instructions

  1. Sauté the onion, carrots, and celery in olive oil or broth until translucent.
  2. Add garlic, rosemary, salt, pepper, and sausage (if using) and sauté briefly.
  3. Stir in the beans with their liquid, tomatoes, and broth, then bring to a simmer.
  4. Lower the heat, add the pasta, and cook while checking for doneness.
  5. Serve with optional toppings.
