Instructions
- Rinse the quinoa under cold water, then combine with water and salt in a saucepan and bring to a boil.
- Reduce heat and simmer until water is absorbed, then fluff with a fork.
- Toss zucchini, yellow squash, and green beans in a bowl with a dressing made from balsamic vinegar, olive oil, and minced garlic.
- Season the vegetables with salt and pepper, then grill them in a basket or foil packet until tender.
- Combine the cooked quinoa with the grilled vegetables and basil, then drizzle with extra dressing and garnish with Parmesan cheese if desired.
