Quinoa with Grilled Vegetables

Ingredients

The quinoa

  • 1 cup uncooked quinoa
  • 2 cups water
  • a pinch of salt

The vegetables

  • 1 large zucchini, sliced
  • 1 large yellow squash, sliced
  • cups green beans, ends snapped off

The dressing

  • ¼ cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • to taste salt and black pepper

The garnish

  • cup freshly chopped basil leaves
  • cup Parmesan cheese, optional
  • extra balsamic vinegar and olive oil for drizzling, optional

Instructions

  1. Rinse the quinoa under cold water, then combine with water and salt in a saucepan and bring to a boil.
  2. Reduce heat and simmer until water is absorbed, then fluff with a fork.
  3. Toss zucchini, yellow squash, and green beans in a bowl with a dressing made from balsamic vinegar, olive oil, and minced garlic.
  4. Season the vegetables with salt and pepper, then grill them in a basket or foil packet until tender.
  5. Combine the cooked quinoa with the grilled vegetables and basil, then drizzle with extra dressing and garnish with Parmesan cheese if desired.
