Black Bean Spinach Enchiladas

Ingredients

  • 1 can green enchilada sauce (10-ounce)
  • 6 large whole grain tortillas
  • 3 cups cooked or canned black beans
  • 1 can diced tomatoes (14.5-ounce)
  • 2 cups fresh baby spinach
  • 3 stalks green onions
  • cup fresh cilantro
  • 1 cup shredded plant-based cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Pour ½ cup of enchilada sauce into the bottom of a large baking dish.
  3. Assemble the enchiladas by placing beans, tomatoes, spinach, green onions, and cilantro in each tortilla, then roll them up.
  4. Place the rolled enchiladas seam side down in the baking dish.
  5. Cover with the remaining enchilada sauce and smooth it over the enchiladas.
  6. Sprinkle with plant-based cheese and bake uncovered for about 35 minutes until golden brown.
  7. Garnish with additional green onions and cilantro if desired, and serve immediately.
