Black Bean Spinach Enchiladas

Instructions
- Preheat the oven to 375°F.
- Pour ½ cup of enchilada sauce into the bottom of a large baking dish.
- Assemble the enchiladas by placing beans, tomatoes, spinach, green onions, and cilantro in each tortilla, then roll them up.
- Place the rolled enchiladas seam side down in the baking dish.
- Cover with the remaining enchilada sauce and smooth it over the enchiladas.
- Sprinkle with plant-based cheese and bake uncovered for about 35 minutes until golden brown.
- Garnish with additional green onions and cilantro if desired, and serve immediately.
