Ingredients

The Fish

  • 1 lb wild cod
  • ½ cup AP flour
  • ½ teaspoon salt
  • ½ teaspoon granulated garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon oregano
  • ½ cup beer
  • ¼ cup oil for frying

The Bowl Ingredients

  • to taste Cilantro Lime Rice
  • to taste Mexican Pinto Beans
  • to taste Canned seasoned Black beans
  • to taste Mexican Slaw
  • to taste Chipotle Mayo or Creamy Avocado Sauce
  • to taste Pickled red onions
  • to taste Fresh veggies (sliced radishes, sliced cucumber, cilantro, green onions, grated carrots, sprouts, or avocado)
  • to taste Limes
  • to taste Crumbled Queso fresco cheese (optional)
  • to taste Hot sauce

Instructions

  1. Prepare any desired Baja Bowl ingredients ahead of time.
  2. Cut the fish into four 4-ounce pieces and pat dry.
  3. Make the batter by whisking together beer, spices, and flour in a bowl.
  4. Coat the fish pieces in the batter.
  5. Heat oil in a skillet until very hot, then carefully fry the battered fish until golden and cooked through, about 6-8 minutes total.
  6. Place the fried fish on a paper towel to blot excess oil.
  7. Assemble the bowls with warm beans or rice as the base, add veggies, avocado, and slaw, then top with the fried fish.
  8. Serve with limes and chipotle mayo or hot sauce.
