Pistachio Ice Cream

Ingredients

The ice cream base

  • 2 cups heavy whipping cream
  • 14 oz sweetened condensed milk
  • 1 tbsp vanilla bean paste or vanilla extract
  • ¼ tsp salt
  • ¼ - ½ cup crumbled feta cheese

The flavorings

  • ½ cup pistachio cream
  • 3 tbsp chopped pistachios

Instructions

  1. Line a loaf pan with parchment paper.
  2. Mix vanilla extract, salt, and sweetened condensed milk in a small bowl.
  3. Whip the heavy cream in a mixing bowl until soft-medium stiff peaks form.
  4. Fold the sweetened condensed milk mixture and crumbled feta into the whipped cream gently.
  5. Pour half of the mixture into the loaf pan, add pistachio cream and chopped pistachios, and swirl with a toothpick.
  6. Add the remaining ice cream mixture, top with more pistachio cream and chopped pistachios, and swirl again.
  7. Cover the pan tightly with plastic wrap and freeze for at least 8 hours or overnight before serving.
