No Churn Pistachio Ice Cream

Ingredients

The ice cream

  • 16 oz coconut milk
  • ½ cup pistachio nut meats
  • ¼ cup pure maple syrup
  • 1 tbsp grass-fed gelatin or collagen
  • a pinch salt

The topping

  • ¼ cup pistachio nut meats, chopped
  • 2 tbsp toasted coconut flakes

Instructions

  1. Blend all ice cream ingredients until creamy and the pistachios are pulverized.
  2. Pour the mixture into a freezer-safe container and chill for a few hours.
  3. If the ice cream has been in the freezer for more than a few hours, remove it 15-20 minutes before serving.
  4. Scoop the ice cream into bowls and sprinkle with chopped pistachios and toasted coconut before serving.
