Ingredients

The broth

  • 4 cups vegetable broth

The soup

  • 1 sheet nori (dried seaweed, optional)
  • 3-4 Tbsp white or yellow miso paste
  • ½ cup chopped green chard or other sturdy green
  • ½ cup chopped green onion
  • ¼ cup firm tofu (cubed)

Instructions

  1. Heat the vegetable broth in a medium saucepan until it simmers.
  2. In a small bowl, whisk the miso paste with a little hot water until smooth.
  3. Add the chard, green onion, and tofu to the broth and cook for 5 minutes.
  4. Stir in the nori and remove the pot from heat.
  5. Add the miso mixture to the soup, stir to combine, and adjust seasoning if needed.
  6. Serve warm and enjoy!
