Mango Chicken Salad

Ingredients

The salad

  • ½ lb. chicken breast
  • 1 tbs. minced garlic
  • 1 tbs. minced jalapeno
  • 1 tbs. olive oil
  • 1 tsp. chili powder
  • 1 cup celery, chopped
  • 1 mango peeled and chopped
  • 3 tbs. light olive oil mayonnaise
  • 2 tbs. plain yogurt
  • ½ lime juice and zest
  • ½ cup fresh chopped cilantro

Optional add-ins

  • 2 tbs. minced red onion
  • 1 chopped roasted red pepper
  • 1 cup black beans
  • 1 tsp. sugar

Instructions

  1. Sauté garlic and jalapeno in olive oil until soft.
  2. Sprinkle chicken with salt, pepper, and chili powder, then cook until browned.
  3. Once cooled, dice or shred the chicken.
  4. In a large bowl, combine celery, mango, and chicken.
  5. Stir in mayonnaise, yogurt, lime juice, and zest, then season with salt and pepper.
  6. Add any optional ingredients if desired.
  7. Refrigerate for a few days and add cilantro just before serving.
