Ingredients

The salad

  • 3 ½ cups mango, diced

The dressing

  • cup olive oil
  • ¼ cup lime juice, freshly squeezed
  • 1 tablespoon honey
  • ¾ teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Combine diced mango, avocado, red bell pepper, jalapeno, red onion, and cilantro in a large bowl.
  2. In a small bowl, whisk together olive oil, lime juice, honey, chili powder, cumin, salt, and pepper to create the dressing.
  3. Pour the dressing over the salad mixture and toss gently to coat.
  4. Serve immediately or refrigerate for later use, adding avocado just before serving if prepared in advance.
