Ingredients

The salad

  • 3 medium or 2 large ripe mangos
  • 1 each red bell pepper
  • ¼ medium red onion
  • 1 each jalapeño pepper
  • 2 cups mixed fresh basil and mint leaves
  • ½ cup chopped, toasted peanuts

The dressing

  • 2 tablespoons fresh lime juice
  • 1 tablespoon avocado oil
  • 1 tablespoon tamari or soy sauce
  • ½ teaspoon honey or agave nectar
  • ¼ teaspoon grated fresh ginger
  • ¼ teaspoon sea salt

Instructions

  1. In a large bowl, combine the mango, red pepper, onion, and jalapeño.
  2. In a separate small bowl, whisk together the lime juice, avocado oil, tamari, honey, ginger, and salt to make the dressing.
  3. Pour the dressing over the salad and toss to combine.
  4. Add the herbs and peanuts, toss again, and season to taste.
  5. Garnish with reserved herbs and peanuts, then serve immediately.
