Mango Salad

The salad

The dressing

fresh lime juice

avocado oil

tamari or soy sauce

honey or agave nectar

grated fresh ginger

Instructions
- In a large bowl, combine the mango, red pepper, onion, and jalapeño.
- In a separate small bowl, whisk together the lime juice, avocado oil, tamari, honey, ginger, and salt to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Add the herbs and peanuts, toss again, and season to taste.
- Garnish with reserved herbs and peanuts, then serve immediately.
