Mango Salad with Jicama and Lime

Ingredients

The salad

  • 1 medium-large jicama
  • 1–2 pieces very firm or green mangos (unripe mango)
  • ¼ cup thinly sliced red onion
  • 1–2 tablespoons jalapeno, finely chopped (optional)
  • ¼–½ cup chopped cilantro

The dressing

  • 1 lime juice and zest
  • ½ an orange juice
  • 1–2 tablespoons olive oil
  • to taste salt and pepper
  • to taste sugar or honey

Instructions

  1. Peel and grate the jicama using a grater or a food processor.
  2. Peel and grate the mango in the same manner.
  3. Combine all ingredients in a bowl and toss well.
  4. Adjust seasonings to taste, adding more jalapeno if desired.
  5. If using a very green mango, consider adding sugar or honey to balance the lime.
