Ingredients

The salad

  • 1 head butter lettuce
  • 1 ½ cups finely shredded carrot
  • 1 ¼ cups shredded red cabbage
  • 1 large ripe mango (cubed)
  • ½ cup fresh chopped cilantro

The dressing

  • cup creamy salted peanut butter
  • 2 ½ Tbsp lime juice
  • 1 ½ Tbsp maple syrup
  • 2-3 tsp chili garlic sauce
  • 3 Tbsp coconut aminos
  • to taste water to thin

For serving (optional)

  • to taste roasted salted peanuts (chopped)
  • to taste fresh cilantro

Instructions

  1. Wash and dry the butter lettuce, then tear or chop it into bite-sized pieces and place it in a large mixing bowl.
  2. Add the shredded carrot, red cabbage, cubed mango, and chopped cilantro to the bowl.
  3. In a small mixing bowl, combine the peanut butter, lime juice, maple syrup, chili garlic sauce, and coconut aminos. Whisk until smooth, adding water as needed to thin the dressing.
  4. Taste the dressing and adjust the flavor by adding more maple syrup, chili garlic sauce, lime juice, or coconut aminos as desired.
  5. Divide the salad among serving dishes and serve the dressing on the side. Optionally, garnish with chopped peanuts and additional cilantro.
  6. Enjoy the salad fresh. Store leftovers in the refrigerator for up to 3 days, keeping the dressing separate if possible.
