Vibrant Mango Salad with Peanut Dressing

Instructions
- Wash and dry the butter lettuce, then tear or chop it into bite-sized pieces and place it in a large mixing bowl.
- Add the shredded carrot, red cabbage, cubed mango, and chopped cilantro to the bowl.
- In a small mixing bowl, combine the peanut butter, lime juice, maple syrup, chili garlic sauce, and coconut aminos. Whisk until smooth, adding water as needed to thin the dressing.
- Taste the dressing and adjust the flavor by adding more maple syrup, chili garlic sauce, lime juice, or coconut aminos as desired.
- Divide the salad among serving dishes and serve the dressing on the side. Optionally, garnish with chopped peanuts and additional cilantro.
- Enjoy the salad fresh. Store leftovers in the refrigerator for up to 3 days, keeping the dressing separate if possible.
