Ingredients

The salad

  • 1 head butter leaf lettuce
  • 1 piece red bell pepper
  • 3 pieces ripe champagne mangos
  • ½ cup green onion
  • cup chopped roasted peanuts
  • ¼ cup fresh cilantro
  • 1 medium jalapeño

The peanut dressing

  • ¼ cup creamy peanut butter
  • ¼ cup lime juice
  • 1 tablespoon tamari or soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 2 cloves garlic
  • 1 pinch red pepper flakes

Instructions

  1. Combine all salad ingredients in a large serving bowl.
  2. Mix all dressing ingredients in a measuring cup or bowl and whisk until combined.
  3. Drizzle the dressing over the salad and toss to combine.
  4. Serve immediately.
