Thai Inspired Mango Salad

Ingredients

The salad

  • 2 ripe mangos diced into cubes
  • 1 unit cucumber, seeds removed, sliced into matchsticks
  • ¼ unit red onion, diced small
  • 1 unit papaya, diced into cubes
  • ½ cup chopped cilantro
  • ½ cup chopped peanuts

The dressing

  • 2 tbsp tamari or soy sauce
  • 4 tsp fish sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice wine vinegar
  • 1 tbsp maple syrup
  • ¼ tsp chili flakes
  • 2 tbsp lime juice

Instructions

  1. Whisk together all of the dressing ingredients and set aside.
  2. Combine all of the salad ingredients in a bowl.
  3. Drizzle with the dressing, toss well, and serve.
