Ingredients

The salad

  • 1 large mango, julienned
  • 1 red pepper, julienned
  • 1 avocado, diced
  • ¼ cup diced cashews, roasted and unsalted
  • ¼ cup diced fresh cilantro

The dressing

  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup
  • ½ tablespoon tamari (or 1 tablespoon of soy sauce)
  • 1 teaspoon sriracha

Instructions

  1. In a small bowl, whisk together lime juice, sesame oil, maple syrup, tamari, and sriracha until combined.
  2. In a medium bowl, combine mango, red pepper, avocado, cashews, and cilantro.
  3. Pour the dressing over the salad and gently toss to combine.
  4. Serve immediately.
