Ingredients

The salad

  • 1 ½ to 2 heads red lettuce, chopped
  • 3 cups spinach or arugula
  • ½ medium cantaloupe or other melon (papaya may be substituted)
  • 1 medium ripe avocado, chopped
  • ½ cup chopped mango
  • to taste lime or lemon slices to garnish

The dressing

  • ½ cup sugar or sugar substitute
  • cup white vinegar
  • ½ teaspoon dry mustard
  • ½ cup chopped onion
  • ½ cup olive oil or avocado oil
  • 2 tablespoons fresh melon seeds (or papaya if substituting)
  • 1 teaspoon honey (optional)
  • 2 teaspoons sea salt

Instructions

  1. Combine all salad ingredients in a salad bowl.
  2. Blend all dressing ingredients in a blender, adding seeds last, until creamy.
  3. Pour dressing over the salad, using as much as desired. Store any leftover dressing in the refrigerator.
