Traditional Birthday Bread Pudding

Ingredients

  • 12 slices day-old baguette, cut into 3/4-inch cubes
  • 4 eggs at room temperature
  • ½ cup firmly packed light brown sugar
  • ¾ tsp vanilla extract
  • ½ tsp ground cinnamon
  • pinch freshly grated nutmeg
  • pinch salt
  • 4 cups milk
  • ¼ cup dried cranberries or raisins
  • confectioners’ sugar for dusting

Instructions

  1. 1. Lightly butter an 8-inch square baking dish and spread the bread cubes in it.
  2. 2. In a bowl, whisk together the eggs, brown sugar, vanilla, cinnamon, nutmeg, and salt until well blended.
  3. 3. Pour in the milk and whisk until combined, then pour the mixture over the bread cubes.
  4. 4. Let the mixture stand, pressing down on the bread occasionally, until evenly soaked for about 20 minutes.
  5. 5. Preheat the oven to 350°F.
  6. 6. Scatter the cranberries over the soaked bread and press to submerge them.
  7. 7. Set the baking dish in a large, shallow roasting pan and add hot water to the roasting pan halfway up the sides of the baking dish.
  8. 8. Bake the pudding until a knife inserted near the center comes out almost clean, about 45 to 55 minutes.
  9. 9. Serve warm or at room temperature, dusting the top of each slice with confectioners' sugar.
