Tikka Masala Meatballs

Ingredients

Tikka Masala Sauce

  • 15 oz canned full-fat coconut milk
  • 15 oz canned tomato sauce
  • 2 tablespoons garam masala
  • 1 teaspoon ground cumin
  • ½ teaspoon ground turmeric
  • ½ teaspoon garlic powder
  • teaspoon ground ginger
  • ¼ teaspoon salt

Meatballs

  • 1 lb ground chicken
  • ¼ cup quick-cooking oats
  • ¼ cup white whole wheat flour
  • 1 large egg
  • 1 teaspoon garlic powder
  • teaspoon salt
  • teaspoon ground pepper
  • 2 tablespoons milk

Other

  • 2 tablespoons olive oil
  • ½ medium yellow onion, diced
  • 1 cup frozen peas
  • to taste fresh parsley, chopped (for topping)

Instructions

  1. Prepare the tikka masala sauce by mixing all sauce ingredients in a bowl and set aside.
  2. In a large bowl, combine all meatball ingredients and mix well.
  3. Heat olive oil in a large pot over medium-high heat.
  4. Scoop and roll the meat mixture into balls and cook in the hot oil until golden brown.
  5. Remove meatballs and sauté diced onion in the remaining oil for 3 minutes.
  6. Add the browned meatballs back into the pot and pour in the tikka masala sauce.
  7. Bring the sauce to a boil, then cover and simmer on low for 15 minutes.
  8. Add frozen peas and cook uncovered for an additional 2-3 minutes.
  9. Taste and adjust salt if necessary, then serve over your choice of grain and garnish with parsley.
