Ingredients

The pasta

  • 85 g whole wheat farfalle

The salad

  • ¼ each red bell pepper, finely diced
  • ¼ each yellow bell pepper, finely diced
  • ¼ each orange bell pepper, finely diced
  • 100 g extra firm tofu, finely diced
  • ¼ cup red onion, finely chopped
  • 25 g sliced black olives
  • 15 g pecan, chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp balsamic vinegar
  • 2 tbsp fresh oregano, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tsp lemon zest, finely chopped

Instructions

  1. Cook the pasta according to package instructions and rinse under cold water to cool.
  2. While the pasta is cooking, prepare all the ingredients and mix them in a large bowl.
  3. Add the cooled pasta to the bowl and mix well.
  4. Serve immediately or refrigerate for a few hours to enhance the flavors.
