Ingredients

  • 70 g whole wheat pasta
  • ¼ each red bell pepper
  • ¼ each yellow bell pepper
  • ¼ each orange bell pepper
  • 100 g extra firm tofu
  • 50 g light Emmenthal cheese
  • 12 pieces kalamata olives
  • ½ cup fresh parsley
  • 1 clove garlic
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp zaatar
  • 1 tsp olive oil

Instructions

  1. 1. Cook the pasta according to package instructions and rinse under cold water to cool.
  2. 2. While the pasta is cooking, prepare all the ingredients and mix them in a large bowl.
  3. 3. Add the cooled pasta to the bowl and mix everything well.
  4. 4. Serve immediately or refrigerate for a few hours to enhance the flavors.
