Ingredients

The pasta

  • 1 pound elbow macaroni

The sauce

  • ½ cup butter
  • ¼ cup all-purpose flour
  • 3 cups milk
  • 8 ounces cheddar cheese
  • 8 ounces Gruyere cheese
  • 1 clove garlic
  • to taste hot sauce

The topping

  • 1 cup bread crumbs
  • 2 tablespoons butter

Seasoning

  • to taste salt and freshly ground black pepper

Instructions

  1. 1. Preheat the oven to 350°F and butter a casserole dish.
  2. 2. Boil water with salt, add macaroni, and cook until al dente, about 6 minutes. Drain and do not rinse.
  3. 3. In the same pot, melt 6 tablespoons of butter, whisk in flour, and cook for 1 minute.
  4. 4. Whisk in hot milk and bring to a boil, then remove from heat and stir in cheeses until melted.
  5. 5. Fold in the macaroni and season with salt and hot sauce. Pour into the casserole dish.
  6. 6. Melt the remaining butter, stir in garlic, and mix in breadcrumbs until coated.
  7. 7. Sprinkle breadcrumbs over the macaroni and bake for 30 to 40 minutes until bubbling and browned.
