Ingredients

The pasta

  • 12 oz dry macaroni pasta
  • 1 tsp salt
  • to taste pepper

The sauce

  • 5 Tbsp butter
  • 5 Tbsp flour
  • 2 ½ cups whole milk
  • 1 cup half and half
  • 2 cups extra sharp cheddar cheese
  • 1 cup Gruyere cheese

The topping

  • 1 cup panko bread crumbs
  • 1 Tbsp butter

Instructions

  1. Preheat the oven to 325°F and prepare a baking dish with non-stick spray.
  2. Melt 1 Tbsp of butter in a skillet and toast the panko until golden brown, then set aside.
  3. Cook the macaroni in salted boiling water until al dente, then drain.
  4. In a saucepan, melt the remaining butter, add flour, and cook for 1 ½ minutes.
  5. Slowly whisk in warmed milk and half and half, seasoning with salt and pepper, and cook until thickened.
  6. Remove from heat and stir in the cheddar and Gruyere cheese.
  7. Combine the drained pasta with the cheese sauce, mixing well.
  8. Pour the mixture into the baking dish, top with toasted panko, and bake for about 20 minutes until bubbling.
  9. Let cool for a few minutes before serving.
