Instructions
- Preheat the oven to 325°F and prepare a baking dish with non-stick spray.
- Melt 1 Tbsp of butter in a skillet and toast the panko until golden brown, then set aside.
- Cook the macaroni in salted boiling water until al dente, then drain.
- In a saucepan, melt the remaining butter, add flour, and cook for 1 ½ minutes.
- Slowly whisk in warmed milk and half and half, seasoning with salt and pepper, and cook until thickened.
- Remove from heat and stir in the cheddar and Gruyere cheese.
- Combine the drained pasta with the cheese sauce, mixing well.
- Pour the mixture into the baking dish, top with toasted panko, and bake for about 20 minutes until bubbling.
- Let cool for a few minutes before serving.
