Ingredients

The pasta and sauce

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 ¼ cups water
  • 4 cups milk
  • 1 pound corkscrew pasta
  • ¾ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper

The cheese

  • 5 cups cheddar cheese
  • 1 cup mozzarella cheese

Other

  • as needed spray cooking spray

Instructions

  1. Preheat the oven to 375°F and coat a baking dish with cooking spray.
  2. Melt butter in a large pot and whisk in flour until combined.
  3. Add water and whisk until smooth, then add milk and whisk again.
  4. Stir in pasta, salt, garlic powder, onion powder, smoked paprika, and black pepper, then bring to a simmer.
  5. Cook for 10-12 minutes, stirring occasionally, until pasta is tender.
  6. Reduce heat to low and stir in 4 cups of cheddar cheese and mozzarella until smooth.
  7. Spread the pasta mixture in the baking dish and sprinkle remaining cheddar cheese on top.
  8. Bake for 15-20 minutes until cheese is melted and bubbling.
