Ingredients

Bread Crumb Topping

  • 1 cup bread crumbs
  • ¼ cup unsalted butter
  • ½ teaspoon kosher salt

Pasta + Sauce

  • ½ cup unsalted butter
  • ½ cup all-purpose flour
  • 5 cups milk
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon Dijon mustard
  • 16 ounces grated cheese (combination of swiss, comté, raclette, cheddar)
  • 1 pound pasta (cavatappi or choice)

Instructions

  1. Preheat the oven to 350°F and butter a 6-quart casserole dish.
  2. In a small saucepan, melt the butter for the bread crumbs and mix in the bread crumbs and salt, then set aside.
  3. In a medium pot, melt the butter for the sauce, then add flour and cook for about a minute.
  4. Gradually add the milk in two batches while stirring continuously until the mixture thickens.
  5. Turn off the heat and whisk in salt, spices, and grated cheeses until melted.
  6. Boil salted water and cook the pasta until al dente, then drain and rinse under cold water.
  7. Combine the pasta with the cheese sauce until well mixed.
  8. Layer half of the pasta mixture in the prepared dish, add a layer of cheese, then top with the remaining pasta.
  9. Sprinkle the reserved bread crumbs and remaining cheese on top.
  10. Bake for 40 to 45 minutes until golden brown and bubbling.
