Squash Casserole

Instructions
- Melt 2 tablespoons of butter in a large pan over medium heat and preheat the oven to 350°F.
- Add the squash and onion to the pan and cook until tender, about 5-6 minutes. Season with salt and pepper.
- Remove the squash mixture from the pan and keep warm.
- In the same pan, melt 2 more tablespoons of butter and whisk in the flour, cooking for 1 minute.
- Whisk in the milk and cook for 2-3 minutes, then add the cream, thyme, and seasonings, cooking until thickened.
- Coat a baking dish with cooking spray and combine the sauce with the squash and 1½ cups of cheese.
- Pour the mixture into the baking dish and top with the remaining cheese.
- Melt the remaining butter and mix with the crushed crackers, then sprinkle over the casserole.
- Bake for 15-20 minutes until the cheese is melted and the crackers are golden brown.
- Sprinkle with chives, let stand for 5 minutes, then serve.
