Squash Casserole

Ingredients

  • 6 tablespoons butter
  • 2 tablespoons flour
  • 2 pounds yellow squash
  • ½ cup onion
  • ¼ teaspoon dried thyme
  • ½ cup heavy cream
  • 1 cup milk
  • cups cheddar cheese
  • 1 cup buttery crackers
  • 2 tablespoons chives
  • to taste salt
  • to taste black pepper

Instructions

  1. Melt 2 tablespoons of butter in a large pan over medium heat and preheat the oven to 350°F.
  2. Add the squash and onion to the pan and cook until tender, about 5-6 minutes. Season with salt and pepper.
  3. Remove the squash mixture from the pan and keep warm.
  4. In the same pan, melt 2 more tablespoons of butter and whisk in the flour, cooking for 1 minute.
  5. Whisk in the milk and cook for 2-3 minutes, then add the cream, thyme, and seasonings, cooking until thickened.
  6. Coat a baking dish with cooking spray and combine the sauce with the squash and 1½ cups of cheese.
  7. Pour the mixture into the baking dish and top with the remaining cheese.
  8. Melt the remaining butter and mix with the crushed crackers, then sprinkle over the casserole.
  9. Bake for 15-20 minutes until the cheese is melted and the crackers are golden brown.
  10. Sprinkle with chives, let stand for 5 minutes, then serve.
