Yellow Squash Casserole

Ingredients

  • 3 lbs Yellow squash (sliced into 1/4 inch slices)
  • 2 ½ tbsp Olive oil
  • ¾ tsp Sea salt (divided)
  • tsp Black pepper (divided)
  • 2 ¾ cup Cheddar cheese (shredded, divided)
  • ¾ cup Heavy cream
  • 2 cloves Garlic (minced)

Instructions

  1. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the squash slices with olive oil, ½ teaspoon sea salt, and ¼ teaspoon black pepper.
  3. Spread the squash slices in a single layer on the lined baking sheet and roast for 10-12 minutes until tender.
  4. Layer the roasted squash in a 9x13 baking dish.
  5. In a medium saucepan, combine 2 ¼ cups of cheddar cheese, heavy cream, garlic, ¼ teaspoon sea salt, and ⅛ teaspoon black pepper, heating until melted and smooth.
  6. Pour the cheese sauce over the squash and sprinkle the remaining ½ cup of cheddar cheese on top.
  7. Bake for 20-25 minutes until the casserole starts to bubble, then broil for 2-3 minutes until the cheese is golden.
