Ingredients

The base

  • 1 teaspoon butter or coconut oil
  • ½ yellow onion chopped
  • 2 cloves garlic
  • pounds summer squash
  • ½ teaspoon sea salt
  • a pinch crushed red pepper flakes
  • ½ cup plain goat’s milk yogurt or Greek yogurt

The topping

  • 2 ounces goat cheddar

Instructions

  1. Melt the butter or coconut oil in a skillet over medium heat and sauté the onion for 5 minutes.
  2. Add the garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped squash, season with salt and red pepper flakes, and sauté until tender, about 10 to 15 minutes.
  4. Stir in the yogurt, then sprinkle the shredded cheddar over the top.
  5. Set the oven’s broiler to high and broil until the cheese is bubbly, about 3 minutes.
  6. Serve warm using a slotted spoon.
