Chocolate Coconut Chex Mix

Instructions
- Pour the Chex cereal into a large bowl and set aside.
- In a medium microwavable bowl, melt the chocolate chips, heating for 1 minute, then stirring, and repeating in 30-second intervals until smooth.
- Stir in the coconut extract into the melted chocolate.
- Pour the melted chocolate over the Chex cereal and gently stir until well coated.
- Add the shredded coconut and stir until the cereal is evenly coated.
- Spread the mixture onto two large baking sheets and sprinkle with powdered sugar until well coated.
- Allow the mix to sit until the chocolate is dry, about 15 minutes, then serve.
