Ingredients

The sauce

  • 3 tablespoons olive oil
  • 1 small onion
  • 4 cloves garlic
  • 56 ounces canned tomatoes
  • ½ teaspoon sugar
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon Italian seasoning

For serving

  • 16 ounces penne pasta

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add grated onion and minced garlic, cooking until fragrant.
  3. Pour in canned tomatoes and bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Stir in sugar, salt, pepper, and Italian seasoning, cooking for an additional 1-2 minutes.
  5. Blend the sauce until smooth using an immersion or regular blender.
  6. Cook the penne pasta according to package instructions and reserve ¼ cup of pasta water.
  7. Combine the cooked pasta with the sauce and reserved pasta water, simmering for 5 minutes before serving.
