Ingredients

  • 2 pounds ripe fresh tomatoes (Roma or vine-ripened) or 1 can (28 ounces) whole peeled tomatoes (preferably San Marzano)
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3-4 cloves garlic, minced
  • to taste salt
  • to taste freshly ground black pepper
  • 1 teaspoon sugar
  • ¼ cup fresh basil leaves, chopped

Instructions

  1. Prep the tomatoes by blanching, peeling, and chopping if using fresh tomatoes.
  2. Heat olive oil in a pan over medium heat and sauté the onion until translucent.
  3. Add minced garlic and cook until fragrant.
  4. Stir in the chopped tomatoes and cook until they start breaking down.
  5. Season with salt, pepper, and sugar, then reduce heat and simmer for 20 minutes.
  6. Blend the sauce until smooth using an immersion blender.
  7. Stir in chopped basil and cook for a few more minutes before serving.
