Pomodoro Sauce

Instructions
- Prep the tomatoes by blanching, peeling, and chopping if using fresh tomatoes.
- Heat olive oil in a pan over medium heat and sauté the onion until translucent.
- Add minced garlic and cook until fragrant.
- Stir in the chopped tomatoes and cook until they start breaking down.
- Season with salt, pepper, and sugar, then reduce heat and simmer for 20 minutes.
- Blend the sauce until smooth using an immersion blender.
- Stir in chopped basil and cook for a few more minutes before serving.
