Quick Homemade Tomato Sauce

Ingredients

  • ¼ cup olive oil
  • 2 cups finely chopped white or yellow onion
  • 3 cloves garlic, minced
  • to taste none kosher salt
  • a pinch none crushed chili flakes
  • ½ cup white wine
  • 1 28-oz can peeled whole San Marzano tomatoes
  • ½ cup fresh basil (about ½ ounce)

Instructions

  1. Heat olive oil in a medium pot and add onions and garlic with a pinch of salt, cooking on low for 10 minutes.
  2. Add crushed red pepper flakes and white wine, simmering for 2-3 minutes until the alcohol smell dissipates.
  3. Add the canned tomatoes, snipping them into smaller pieces, and season with salt. Simmer for 15 minutes.
  4. Transfer the sauce to a blender or food processor, add basil, and purée until smooth. Adjust salt to taste.
