Homemade Tomato Sauce

Instructions
- Prepare the tomatoes by boiling them for 30-60 seconds until the skins split, then transfer to cold water, peel, and chop.
- Heat olive oil in a large pot, add diced onions, and sauté until golden, then add garlic and cook briefly.
- Stir in tomato paste and cook for a couple of minutes before adding the chopped tomatoes.
- Bring to a boil, then reduce heat and simmer uncovered for 2-3 hours, stirring occasionally.
- Add sugar or honey, herbs, salt, and pepper to taste before cooling the sauce.
- Once cooled, transfer to freezer-safe containers or bags and label before freezing.
