Homemade Tomato Sauce

Ingredients

  • 2.5 lbs roma tomatoes
  • 1 cup fresh basil
  • 4 cloves garlic
  • 1 tsp salt
  • ½ tsp pepper
  • 3 T. olive oil

Instructions

  1. Wash the roma tomatoes.
  2. Cut the tomatoes in half and place them on a baking sheet.
  3. Add the garlic cloves (in their shell) to the baking sheet.
  4. Drizzle with olive oil and season with salt and pepper.
  5. Roast in a 400º oven for 25 minutes.
  6. Remove from the oven and let cool.
  7. Peel the garlic cloves.
  8. Blend the tomatoes and garlic with fresh basil, salt, and pepper until desired consistency is reached.
  9. Serve with whole wheat pasta.
