Homemade Roasted Tomato Sauce

Instructions
- Preheat the oven to 400ºF and prepare a baking sheet with nonstick spray.
- Wash and slice the tomatoes in half, then place them cut side up on the baking sheet.
- Drizzle the tomatoes with olive oil and season with salt and pepper.
- Roast the tomatoes for about 30 minutes, then add the garlic and roast for another 20-30 minutes until the tomatoes brown.
- Allow the tomatoes to cool slightly, then peel off the skins and discard them.
- Transfer the roasted tomatoes, garlic, basil, and apple cider vinegar to a blender and blend until smooth.
- Taste and adjust seasoning with more salt and pepper if needed.
- Serve immediately or store in a mason jar for later use.
