Homemade Roasted Tomato Sauce

Ingredients

  • 8 medium/large tomatoes
  • 2 tablespoons olive oil
  • 8-10 cloves garlic
  • to taste salt
  • to taste pepper
  • 20 leaves fresh basil
  • 1 teaspoon apple cider vinegar

Instructions

  1. Preheat the oven to 400ºF and prepare a baking sheet with nonstick spray.
  2. Wash and slice the tomatoes in half, then place them cut side up on the baking sheet.
  3. Drizzle the tomatoes with olive oil and season with salt and pepper.
  4. Roast the tomatoes for about 30 minutes, then add the garlic and roast for another 20-30 minutes until the tomatoes brown.
  5. Allow the tomatoes to cool slightly, then peel off the skins and discard them.
  6. Transfer the roasted tomatoes, garlic, basil, and apple cider vinegar to a blender and blend until smooth.
  7. Taste and adjust seasoning with more salt and pepper if needed.
  8. Serve immediately or store in a mason jar for later use.
