Homemade Tomato Sauce

Ingredients

  • 1 large head garlic
  • 2 tablespoons extra virgin olive oil
  • 2 medium yellow onions
  • 1 tablespoon red wine vinegar
  • 5 lbs. fresh ripe plummy tomatoes
  • 1 ¼ teaspoons freshly ground sea salt
  • ¾ teaspoon freshly ground black pepper
  • ½ teaspoon dried oregano
  • ¼ cup chopped fresh parsley
  • 1 bunch fresh basil

Instructions

  1. Preheat the oven and roast the garlic for 45 minutes.
  2. Sauté the chopped onions in olive oil until translucent.
  3. Add red wine vinegar and chopped tomatoes to the pot, cover, and steam for 8 minutes.
  4. Stir in salt, pepper, oregano, parsley, and squeeze in the roasted garlic.
  5. Reduce heat and simmer the sauce for 30 minutes to an hour.
  6. Blend the sauce until smooth and stir in chopped basil.
  7. Allow the sauce to cool before serving or storing.
