Ingredients

  • 5-6 pounds medium or small tomatoes
  • 1 medium head garlic
  • cup extra-virgin olive oil
  • ½ cup fresh basil leaves
  • to taste kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 250°F.
  2. Place the tomatoes on a large baking sheet with a raised edge and add the garlic cloves.
  3. Drizzle the tomatoes and garlic with olive oil and mix to coat.
  4. Top with torn basil leaves and season with salt and pepper.
  5. Bake for 4 hours or until the tomatoes are soft and bursting.
  6. Allow the mixture to cool, then blend until desired consistency.
  7. Store in quart jars or freezer bags.
