Simple Roasted Yellow Tomato Sauce

Ingredients

  • 1.5 pounds sun gold or other small yellow or orange tomatoes
  • 1 medium yellow or white onion, peeled and chopped
  • 2 tablespoons extra-virgin olive oil
  • 1.5 teaspoons kosher salt
  • ½ cup water
  • 3 tablespoons butter
  • to taste none flaky sea salt

Instructions

  1. Preheat the oven to 475ºF.
  2. In a 9×13-inch pan, combine the tomatoes and onion with olive oil and salt.
  3. Roast in the oven for 25-30 minutes until the tomatoes begin to collapse and blister.
  4. Transfer the roasted mixture to a food processor or blender, adding water, and purée until smooth.
  5. Add butter to the purée and blend again until smooth. Adjust salt and add more water if necessary to achieve a pourable consistency.
  6. Store the sauce in the fridge for up to 2 weeks or freeze for up to 3 months.
